Vegan Pesto Sauce Served over Zucchini Noodles and Whole Wheat Angel Hair Pasta

Cook time - 8 min

 

Ingredients for Pesto

3 cups of basil

2 large garlic cloves

1 medium lemon juiced

Zest of 1 lemon

3/4 teaspoon of sea salt

1/4 cup of extra virgin olive oil

1/3 cup of pine nuts

Ingredients for Pasta

1 pound of whole wheat angel hair pasta

1 large zucchini spiralized (you can buy spiralized in the store)

 

Instructions

1) In a food processor or blender add in all ingredients for pesto except for olive oil. Slowly pour in the olive oil as you blend.

2) Remove sauce from blender and heat up the sauce in a small sauce pan

3) Cook angel hair. Drain and add in raw zucchini noodles to mix together. Do not cook zucchini noodles as they get mushy.

4) Add pesto sauce on top and serve
